Heartburn Friendly Cooking: S.O.S Chicken Parmesan

S.O.S. Chicken Parmesan. My son named this dish. The S.O.S. stands for "save our stomachs." Enjoy.
Ingredients (for a single serving):
- 2 slices rice bread (crumbled as finely as possible)
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1/2 cup rice milk
- 2 boneless chicken cutlets
- cooking spray
- 1/2 cup shredded rice cheese
- 1 package instant rice noodles
- 1 Tbs. teriyaki steak sauce (or whatever is best tolerated)
Preheat the oven to 400 degrees. Place the milk in one bowl and the bread crumbs, salt, and pepper in another. Spray the bottom of a small glass baking dish. Dip the chicken in the rice milk, then the bread crumbs. Place the breaded chicken in the sprayed baking dish. Bake breasts until cooked though and crumbs are browned, about 15 minutes. In the meantime, cook the instant rice noodles (usually either add hot water and let stand, or cover with water and cook in the microwave for three minutes). When the chicken is cooked through, remove from the oven, top with the rice cheese, and return to the oven for an additional 5 minutes (until cheese melts). Drain the noodles, toss in the steak sauce, and place the noodles on a plate to serve as a bed for the chicken. Remove the chicken from the oven and serve on the bed of noodles.
