Heartburn Friendly Cooking: Game Day Pizza

    Game Day Pizza. Football season kicked off this week, which means a renewed need for game day snacks. I made this "sauce-free" pizza all summer and the whole family loves it.


    - 1 roll pizza dough (found in the dairy section)

    - Cooking spray
    - 2 Tbs. olive oil
    - 1 1/2 cups mozzarella cheese (cow, rice, or soy all work)
    - 1 medium eggplant (peeled, sliced and grilled until softened)
    - 4 turkey sausage links (sliced into 1/2 inch pieces)
    - salt and pepper for seasoning if tolerated


    Preheat the oven as directed on the roll of pizza dough. Lightly spray a cookie sheet with non-stick cooking spray. Roll the pizza dough onto the cookie sheet (depending on the size of your baking sheet, the dough may not make it all the way across - this is not a problem - just use your fingers to press it to about 1/2 inch thick throughout). Sprinkle the crust with olive oil. Then top with cheese, grilled eggplant and sausage. Season the pizza as tolerated (remember, you can always go light on the seasonings, then serve condiments on the side such as crushed red pepper, crushed garlic, etc. for those who do not live with reflux). Cook in oven for about 15 minutes (until the crust rises and turns a very light brown). Let cool slightly and cut into squares to serve.
