Game Day Sweet Chicken Salad. An Asian pear adds sweetness to this hearty but low acid salad.
- 3 cups cooked chicken (chopped)
- 1/2 cup mayonnaise
- 1/4 cup chopped Asian Pear
- 1/4 cup chopped celery
- 1/4 cup chopped walnuts (or almond slivers if better tolerated)
- salt and pepper for seasoning (as tolerated)
Combine all ingredients in a bowl and stir gently to combine. Season as tolerated. Serve on a rice crackers or a crisp bed of lettuce.
