Heartburn Friendly Cooking: Tea and Cookies

    Tea and Cookies: I recently saw Sunny Anderson make this tea and I am anxious to try it since pears have always been a fruit my son with acid reflux can enjoy. Coconut macaroons are naturally void of wheat, chocolate, and milk so these should go along nicely.

    Pear Tea


    Ingredients:
    - 1/2 cup sugar
    - 4 cups water
    - 2 pears, peeled and coarsely chopped
    - 1 piece ginger, sliced

     

    Directions:
    Bring pear, ginger and sugar to a boil over medium heat. Reduce heat to a simmer and cook until the pears are soft, about 30 minutes. Remove from heat and strain into a bowl. Serve warm or refrigerate until chilled.

     

    Coconut Macaroons


    Ingredients:
    - 3 large egg whites
    - 1 tsp. vanilla
    - 3/4 cup sugar
    - 3 cups sweetened and shredded coconut

     

    Directions:
    Line a baking sheet with parchment paper. Mix the egg whites, vanilla, sugar and coconut together. Place spoonfuls of the batter on the cookie sheet (about 2 tablespoons of batter per cookie). Bake at 350 degrees until tops are golden brown (10 - 15 minutes).
