Heartburn Friendly Cooking: Caribbean Chunky Chicken Sandwich

A Taste of the Caribbean Chunky Chicken Sandwich. The plantain in this sandwich not only works to hold it all together, but reminds me of all of the great food I enjoyed in Puerto Rico.
- 1 can of chicken chunks (usually found near the canned tuna)
- 1/2 of a ripe plantain
- 1/2 tsp. salt
- dash of pepper
- 1 tsp. steak or soy sauce (Ken's Marinade works great)
- 1 tsp. mustard (if tolerated)
- 1/4 cup bread crumbs (I use rice bread)
- a splash of rice milk
- 2 Tbs. cooking oil
In a medium bowl, mash the plantain well with a fork. In the same bowl, mix in the salt, pepper, steak sauce, and mustard. Stir gently until all the ingredients are mixed together. Add the chicken and breadcrumbs to the mixture. Mix everything together gently with your hands and make into burger-sized patties (add a splash of rice milk if more moisture is needed). Heat a skillet on medium heat until the oil is hot. Place the patties in the skillet and brown on one side (about 3 minutes). Carefully flip to the other side and brown another 3 minutes. Serve warm on your favorite bun.
