Heartburn Friendly Cooking: Spring Rolls

    Spring Rolls. Use these spring rolls as a delicious reminder of spring!


    Ingredients: (makes about six rolls)
    - 1 Tbs. canola oil
    - 1/2 package ground turkey
    - 1 large or 6 baby carrots (shredded)
    - 1 celery stock (sliced thinly)

    - 1 cup cooked rice
    - salt and pepper (as tolerated)
    - spring roll wrappers (usually found in the Asian food section of the grocery)
    - your choice of dipping sauce


    Add canola oil to a medium hot skillet. Add ground turkey. Break apart gently with a wooden spoon. Allow to brown on one side (about 2 minutes), then turn gently in skillet. Add the carrot and celery. Finish browning the meat (but do not let it overcook and become too dry). Reduce the heat to low. Add the cooked rice. Season the mixture with salt and pepper as tolerated.

    Fill a shallow baking tray with hot water and place one spring roller wrapper at a time into the water until it is soft and pliable (about 30 seconds). Remove the wrapper gently and place on a wet tea towel. Place the ground turkey filling in the middle of the wrapper, then fold the bottom of the wrapper up over the filling. Fold in the sides of the wrapper, then roll the wrapper upwards to form a neat roll shape. Serve immediately with your favorite dipping sauce.
