Simple Pot Roast. I made this recipe this week and was impressed with not only the simplicity of the dish, but also with the overall flavor that was possible with so few spices.
2 Tbs. olive oil (or enough to lightly coat the bottom of the Dutch oven)
1 Boneless chuck roast (about 3 lbs)
1 tsp. salt
1/4 tsp. black pepper
1 garlic clove
1 cup beef broth or water (I just used water and it was still delicious)
1/2 bag of baby carrots
4 large potatoes cut into 2 inch pieces
Preheat oven to 350 degrees. On the stove top, heat the oil in a Dutch oven over medium high heat. Season the meat on both sides with the salt and pepper. Add the roast to the pan, searing each side for five minutes. Remove the meat from the pan. Add the clove of garlic and stir it around just enough to flavor the oil (at this point you can either leave the garlic clove in the Dutch oven or remove it depending on your tolerance for garlic). Return the meat to the pan and add the beef broth or water. Cook covered in the oven for 1 1/2 hours. Add the carrots and the potatoes to the dish and return to the oven for another hour (or until the meat and vegetables are tender). Shed the meat with two forks and serve with the vegetables.
