Sweet Potato Bisque Heartburn-Free

Sweet Potato Bisque. Sweet potatoes are available, relatively inexpensive this time of year, and easy on the stomach. Serve this warming dish as a side or as a meal with a hearty whole grain bread.
3 medium sweet potatoes, boiled until tender
5 cups chicken stock
2 Tbs. olive oil
2 stalks celery
2 cloves chopped garlic (if tolerated)
2 tsp. grated ginger
1 cup half and half (or rice milk if dairy bothers you)
salt and pepper to taste
Peel and mash the boiled potatoes with a little of the chicken stock until smooth. Heat the oil in a large pot over medium heat and sauté the garlic and celery until tender (about 8 - 10 minutes). Add the sweet potatoes, ginger and remaining chicken stock and bring to a boil. Reduce heat, cover and simmer on low heat for 30 minutes, stirring occasionally. Stir in the half and half (or rice milk). Season with salt and pepper to taste. Serve warm.
