Heartburn Friendly Shrimp Lo Mein

    Shrimp Lo Mein. Sometimes Chinese take out can be way too spicy for those living with acid reflux disease. Try making it at home instead, so you can adjust the spices for your own comfort level.

     

    Ingredients:
    8 ounces fettuccini noodles

    2 tablespoons canola oil
    1 lb. peeled and deveined medium shrimp
    1/2 lb. snow peas, trimmed
    1 clove garlic, chopped (if tolerated)
    1 tsp. chopped ginger
    1/2 tsp. salt
    1/4 cup soy sauce (the soy definitely gives the dish more of a Chinese flavor but if soy sauce bothers you, try using chicken stock or some of the pasta water instead).

     

    Directions:
    Cook the noodles according to the package directions. In the meantime, heat the oil in a large skillet or wok over high heat. Add the shrimp, snow peas, garlic, ginger and salt. Cook, tossing occasionally, until the shrimp turn pink and are cooked throughout (this will take only a couple of minutes). Add the cooked noodles and toss to combine. Add the soy sauce and toss the ingredients until everything is coated with the sauce. Serve warm.
