    Mini Yogurt Parfaits. This time of year, many of us are thinking about lite fare. The Greek yogurt in these parfaits is low in fat and high in protein. The regular yogurt adds a sweetness that adds a nice balance to the Greek yogurt. Fresh fruit on top reminds us that spring is almost here!

    12 Puffed Pastry Mini Shells (usually found in the freezer section)
    2 cups plain Greek yogurt
    2 cups strawberry yogurt
    12 fresh strawberries (stems removed)


    Bake the puffed pastry mini shells as directed on the package. Let cool. Fill each shell halfway with the plain Greek yogurt. Fill each shell the rest of the way with the strawberry yogurt. Top each with a fresh strawberry. Keep refrigerated until ready to serve.
