    Peach Glazed Game Hens. Many groceries carry fresh game hens ready to cook (especially larger markets such as Whole Foods). Game hens are great for single servings and cook quicker than full sized chickens.

    3 Cornish Game Hens (fresh or thawed)
    1/4 cup peach preserves
    2 Tbs. butter
    1 Tbs. Worcestershire sauce
    1 Tbs. salt (Kosher or sea salt work nicely)


    Preheat oven to 375 degrees. Remove giblets from the Cornish hens and discard or save for soup another day. Rinse the hens under cold water and pat dry. Massage the skin of the hens with the salt. Place the hens in a baking pan.

    Melt the peach preserves, butter, and Worcestershire sauce in the microwave for about 30 seconds. Stir until combined. Baste half the glaze onto the skins of the Cornish hens. Bake uncovered for 45 minutes. Remove from the oven and baste with the remaining glaze. Bake an additional 15 minutes and then test with a meat thermometer for doneness. Remove the hens from the oven and let the meat rest about 10 minutes before serving.
