Pineapple Fried Rice

    Pineapple Fried Rice. This is an easy recipe that you can make as mild or spicy as you can tolerate.



    1 cup small cooked shrimp

    1 can chopped pineapple, drained

    1 carrot

    1 stock celery

    1/2 cup yellow onion (if tolerated)

    2 Tbs. oil

    1 tsp. minced garlic (if tolerated)

    1 tsp. minced ginger

    2 cups cold cooked rice

    2 Tbs. soy sauce

    sugar or salt to taste




    Wash and grate the carrot. Finely chop the celery. Peel and chop the onion.

    Heat a frying pan or iron skillet over medium heat. Add the oil, coating the bottom. When the oil is hot, add the garlic and ginger. Stir-fry for 30 seconds, then add the onion. Stir-fry for 1 minute, then add the carrot and celery. Add the pineapple and the shrimp. Stir-fry just long enough to heat through.


    Add the rice and cook for about 2 minutes, stirring continuously. Stir in the soy sauce. Taste and adjust the seasoning if necessary – adding either salt or sugar.  Serve warm.
