Grilled Vegetables on Focaccia. Anytime I see a recipe for something that looks like a pizza but omits the tomato sauce I am excited!

Ingredients:

2 Tbs. olive oil

1 tsp. dried oregano

2 medium zucchini, cut into strips

2 cups yellow sweet peppers (if tolerated)

1 medium eggplant, cut crosswise into slices

2 oz soft goat cheese

2 oz cream cheese

1 12-inch Italian flatbread (focaccia)

Directions:

In a large bowl combine the vegetables, oil and oregano. Toss to coat. Place the vegetables on a grill rack over medium high heat. Cook until the veggies are lightly browned and tender, turning occasionally. Remove from grill and coarsely chop the vegetables.

In a small bowl combine the goat cheese and cream cheese; spread over the focaccia. Top with vegetables. Cut into wedges and serve.
