Gluten Free (and heartburn-free!) Bread

    Gluten Free Bread. A friend of mine made this gentle-on-the-stomach bread for my son in her bread machine. It was soft on the inside, and was not as crumbly as many of the rice bread recipes seem to be.

     

    Ingredients:

    1 Tbs. active dry yeast

    2 cups white rice flour

    1/2 cup soy or tapioca flour

    1/2 cup potato starch

    1 Tbs. xanthan gum

    1 tsp. salt

    1 1/2 cups rice milk at room temperature

    1/4 cup honey

    1/4 cup canola oil

    1 Tbs. cider vinegar

    3 eggs

     

     

    Directions:

    Place the ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select the sweet dough cycle. After five minutes, check the consistency of the dough and add additional rice flour or milk if necessary. Let the bread cool for 10 – 15 minutes before removing it from the pan.
