Reflux Friendly Coconut Potato Pancakes

    Coconut Potato Pancakes.

    I am always on the lookout for low acid, gluten free and dairy free side dishes. This one fits the bill!



    1 small container plain coconut yogurt

    1 egg, slightly beaten

    4 cups shredded potatoes (I like Yucon Gold)

    2 Tbs. canola oil

    1 clove garlic

    salt and pepper to taste



    Lay a clean dishtowel into a bowl. Shred the potatoes into the bowl. Lift out and squeeze the towel tightly to drain out as much liquid from the shredded potatoes as possible (this helps them to be more crispy). Add the yogurt and egg to the potatoes, stir gently. In a large skillet, heat the oil to medium high. Place the clove of garlic in the oil and let it sit 30 seconds or so to help infuse the garlic flavor into the oil then remove the garlic. Make the potato mixture into small pancakes and place into the hot oil. Cook on each side about 4 - 5 minutes (you are looking for a light brown outside and cooked at least half way through before you turn the pancakes). Flip and cook on the other side until done. Serve warm.
