Reflux Friendly Cooking: Beef and Vegetable Soup

    Beef and Vegetable Soup.

    Most of the vegetable soups you can buy in a can are either tomato based or have noodles made of wheat and neither works for my family.  I made this soup last night that is both low acid and gluten free and it came out great!

    2 Tbs. canola or olive oil

    1 clove garlic (chopped)

    1/2 med. onion (chopped)

    1/2 head of califlower (chopped)

    2 carrots (peeled and chopped)

    2 stalks of celery (chopped)

    1 small or 1/2 of a large chuck tender roast (cut into 1 inch cubes)

    2 cups cooked rice pasta (Mrs. Leeper’s is my son’s favorite)

    1 cup of beef stock

    1 cup of water

    salt and pepper to taste



    Heat the cooking oil to medium in a large skillet. Add the vegetables and a pinch of salt and pepper. Cook about 1 minute, stirring occasionally. Add the beef cubes and cook each side of the cubes about 30 seconds. Add another pinch of salt and pepper. Add the beef stock and water and bring the soup to a boil, then turn it down to simmer until the beef is cooked through (depending on the size of your cubes, this should go quickly). Add the rice pasta and heat through before serving.
