White Bean and Shrimp Soup

White Bean and Shrimp Soup.

I get excited whenever I find recipes for bean soups that are not tomato based! Try this soup as an alternative to a pot of chili.   

 

Ingredients:

1 Tbs. Olive Oil

1 Tbs. minced shallot

1/2 tsp. minced garlic

1 Qt. vegetable broth

1 cup cooked white beans

1 cup chopped raw shrimp

salt and pepper to taste

 

Directions:

Pour the oil into a Dutch oven. Add shallots and garlic and cook until softened, about 2 minutes. Add the vegetable broth and bring to a boil. Add the white beans, reduce the heat, and simmer for 15 minutes. Add the shrimp and continue to simmer until the shrimp become opaque, about 3 minutes. Season with salt and pepper to taste. Serve warm.
