Chicken and Rice Casserole

    Chicken and Rice Casserole

    The combination of chicken and rice is almost always comforting for someone with acid reflux disease. This casserole not only feels good but also tastes great!



    6 Boneless and skinless chicken thighs

    Cooking spray

    2 Tbs. Olive oil

    1 Clove of garlic, chopped

    1 bunch spinach, chopped (I used fresh but you can also thaw and drain a package of frozen)

    1/2 cup breadcrumbs

    1 cup Gruyere cheese (rice or soy cheese will also work)

    2 bags instant brown rice

    salt and pepper to taste




    Heat the oven to 350 degrees. Spray a glass baking dish or Dutch oven with cooking spray. Place the chicken thighs in the dish – season with salt and pepper. Place in the oven for 45 minutes. In the meantime, heat a skillet to medium and add the olive oil, garlic, spinach and a pinch of salt and pepper. Toss lightly and cook for just a minute or two (enough to wilt the spinach). Remove the spinach from the heat. Cook both bags of the instant rice. Mix the rice with the spinach.


    Remove the chicken from the oven and cut into cubes when cool enough.  Add the chicken to the spinach and rice and return to the baking dish or Dutch oven. Top the mixture with the cheese and then the breadcrumbs. Place under the broiler for five minutes (just until the cheese melts on top). Serve warm.
