Stuffed French Toast

    Stuffed French Toast

    My oldest son said that this was the best French toast he had ever had. It is healthy, low in acid, and works great for breakfast or dinner.



    4 Thickly sliced (at least one inch) pieces of French bread

    1 cup of peanut butter

    1 banana, sliced thinly

    2 eggs

    splash of milk (rice milk works well also)

    1 tsp. vanilla

    pinch of salt and pepper

    1/2 cup honey



    In a bowl, mix together the peanut butter and banana. Set aside. In a shallow baking dish, slightly beat together the eggs, milk, vanilla, and salt and pepper.


    Take each thickly sliced piece of bread and cut about a one inch slit along the “long” side of the bread. Stuff each with one quarter of the peanut butter and banana mixture. Set the bread into the egg mixture to soak about 30 seconds on each side. Place each in a non-stick or sprayed skillet on medium heat until golden brown on each side.


    Serve warm, topped with honey.
