Reflux Friendly Cooking: Old Fashioned Salmon Patties

    Old Fashioned Salmon Patties: I grew up in the Midwest and these yummy salmon patties were a staple in our household. I figured out a way to modify the recipe for my son with GERD and multiple food sensitivities. Below is a recipe for two types of patties, seafood and poultry!

    Salmon Patties:

    - 1 large can salmon
    - 8 - 10 Ritz crackers
    - 1 egg
    - 1 Tbsp of mustard or steak sauce if tolerated
    - Cooking spray or 2 Tbsp canola oil


    Open can of salmon and remove the bones and skin if included (this depends on the brand of salmon). Dump the cleaned salmon into a bowl. Mix all of the ingredients together. Form into patties and place on parchment or waxed paper until skillet is ready. Add cooking spray or canola oil and heat skillet to medium. Brown patties on each side (about 4 minutes per side). They should be brown on the outside and cooked through, but still relatively moist on the inside. Serve on a warmed rice bun with a few slices of avocado and mayonnaise if tolerated.


    Chicken Patties:

    My son with reflux has multiple food allergies so I make these for him. They are really safe and he loves them!


    - 1 can chicken
    - 1/2 ripe plantain mashed (you can also about a half a cup of mashed potatoes, but potatoes have to be cooked first and plantains do not)
    - 1 piece of rice bread (crumbled)
    - 1 Tbsp of mustard or steak sauce if tolerated
    - Cooking spray or 2 Tbsp canola oil
    - Dash of salt (the Ritz crackers provide the salt in the recipe above)

    Make these patties using the recipe above.

    Waffle Fries Drizzled with Honey-Yogurt Dip:

    Ketchup is too acidic for some with acid reflux disease, so try a white dipping sauce as a substitute!


    - 1 package frozen waffle fries

    Cook fries as directed on package. Let cool slightly. Drizzle with the sauce below!

    - 1 cup vanilla or plain yogurt (rice or soy yogurt works)
    - 1/2 cup honey
    - Stir to blend
