    Who Said You Can't Eat a Burrito? Our family loves to eat Mexican food, so I have worked very hard in the kitchen to come up with a burrito that allows my son feel a part of the festivities while at the same time is compatible with his sensitive stomach.

    Ground Turkey Burritos:

    - 1 Tbsp. Canola oil or cooking spray
    - 1/2 lb ground turkey
    - 3/4 cup rice cheese
    - 1 bag instant rice
    - 1 package tortillas (Food for Life makes rice tortillas if corn or wheat is an issue)
    - 1/2 of an avocado sliced
    - 1/2 cup vanilla yogurt (rice or soy)
    - salt and pepper as tolerated

    Lightly coat a large skillet with cooking spray or oil and brown the ground turkey. Reduce the heat to low. In a separate saucepan, cook the instant rice and drain. Add the rice to the ground turkey in the skillet. Then add the cheese. Season the mixture as tolerated. Put a soft tortilla shell between two damp paper towels and heat in the microwave for 15 seconds. Remove the tortilla and fill with ground turkey mixture. Fold the ends then the middle. Top with the avocado and yogurt and serve with a side of Pop Chips if corn is not tolerated. Que aproveche!
