Heartburn Friendly Cooking: Kids Can Cook Too!

Kids Can Cook: Cheese Stuffed Chicken Breasts My boys love any activity that involves pounding, so it comes as no surprise that they seem to enjoy helping make this old standby. I set out all of the ingredients they need in two different work areas and let them each make a chicken breast stuffed with ingredients they can tolerate.
Cheese Stuffed Chicken Breasts: Below are two versions of the recipe. The first version seems to work well for my son with acid reflux disease. You can divide up the chicken breasts and the ingredients depending on how many you are cooking for with a sensitive stomach.
- 8 small boneless chicken breast halves
- 1 and 1/4 cup rice cheese
- 1/4 cup basil if tolerated
- 5 pieces rice bread cut into 1 inch squares
- Splash of rice milk or chicken stock to moisten bread
- Dash of salt and pepper if tolerated
Preheat oven to 350 degrees. To prepare stuffing, combine rice bread, 1/2 of the cheese, basil, salt and pepper and rice milk, until mixture is moistened. Stir gently.
Put two chicken breast halves in a large, freezer weight resealable bag. Pound the chicken with the side of a heavy can, rolling pin or meat mallet until the chicken is 1/4 inch thick. Repeat the process for the remaining chicken breasts.
Place the pounded chicken breasts on a cutting board and spread with 1/8 of the stuffing mixture.
Place the chicken in a baking dish with the seam side down. Pour another splash of rice milk or chicken stock over the chicken and bake for 40 minutes. Sprinkle with remaining cheese and bake 5 more minutes or until cheese is melted and chicken is cooked through.
For the rest of the family... try using these ingredients for the stuffing (everything else will be the same as above):
- 1 can Italian-style diced tomatoes (undrained)
- 1 1/4 cup Mozzarella cheese
- 1/4 cup fresh basil
- 1 pkg. prepared stuffing mix
- 1/3 cup chicken stock or an oil based salad dressing to pour over the chicken before baking.
Combine the tomatoes and their liquid, half of the cheese, basil and dry stuffing mix, and stir until moistened. Stuff and cook the chicken as directed above.
