Weekend Breakfast: Last weekend, many celebrated Easter and Passover with family. If you find you are expecting overnight guests, and at least one person has a sensitive stomach, try this delicious combination of warm Caribbean Bread Pudding served with a cool smoothie for breakfast. This soothing combination is guaranteed to make the crowd linger a little longer and enjoy the time together.
Caribbean Bread Pudding: Using rice bread, rice milk and egg substitute makes this dish easy on the stomach.
- 6 cups cubed rice bread
- 1 cup rice milk
- 1 cup juice (my son tolerates apple peach banana juice)
- 1/2 cup egg substitute
- 2 teaspoons vanilla
- 1 20 oz can crushed pineapple in juice
- 1/3 cup shredded coconut, toasted
Place bread in a large bowl. Whisk together milk and the next three ingredients. Pour over bread mixture, tossing gently. Fold pineapple into the bread mixture. Pour mixture into a lightly greased 11 x 7 inch baking dish. Bake, uncovered at 350 degrees for 40 minutes or until golden brown. Sprinkle with toasted coconut.
Vanilla Banana Smoothie: Bananas are healthy and have one of the lowest acid contents of all the fruits, so serve this with the bread pudding above to make it a piña colada morning.
Ingredients for each smoothie:
- 1 cup milk (use rice or soy)
- 1 banana
- 1 scoop vanilla rice ice cream
Combine ingredients in the blender and process about 30 seconds until smooth.
