Heartburn Friendly Cooking: Hawaiian Vacation

Each week I'll provide a simple menu that is designed for easy digestion. I'll also give you suggestions on how to modify the same recipe for others in your family without acid reflux disease. Take that Hawaiian Vacation! This meal will make you feel like you slipped away to a tropical island, if only for just an evening.

 

Shrimp and Avocado Wrap: If seafood is not tolerated, try substituting chicken pieces for the shrimp.

Ingredients (for 2 wraps):
- 1/4 cup rice vanilla yogurt
- 1 tsp. honey
- 1 tsp. rice vinegar
- 2 rice (or wheat if tolerated) tortillas
- 1/2 avocado
- 1 cup chopped iceberg lettuce
- 4 large cooked shrimp (peeled and chopped)
- salt and pepper if tolerated

 

In a bowl, whisk together the first three ingredients and set aside. Place the tortillas between damp paper towels and microwave for about 30 seconds to soften. Then top tortillas with the shrimp, avocado, and lettuce. Drizzle with the yogurt mixture. Roll up the tortilla and serve with the grilled pineapple.

Grilled Pineapple: I served this last night to a few friends and even those who said they usually did not like pineapple loved it. The heat from the grill caramelizes the sugar in the pineapple and makes it super-sweet.

 

Ingredients:
- 1 whole pineapple
- 1 Tbsp canola oil

 

With a paper towel, lightly oil the grill rack to prevent the pineapple from sticking. With a large knife, cut the top from the pineapple, then remove the hard outer peeling. Slice the pineapple into 1/2 inch slices. Then, using a small paring knife, cut the core from each of the slices so you are left with pineapple "rings." Place the rings on a medium hot grill. Grill the slices about three minutes on each side. Serve warm.
