Heartburn Friendly Cooking: Comforting Casserole

Comforting Casserole: I work two evenings a week and I love this dish because it is so easy to make ahead of time and leave for the babysitter to reheat just before serving.
Crab Casserole: This casserole seems so rich, but don't feel guilty! Using chicken stock, rice cheese and rice noodles makes this easy on most stomachs.
- 1 can lump crab (use shrimp or chicken if crab is not tolerated)
- 1/2 cup chicken or turkey stock (I make this fresh and then keep it in the freezer and then thaw and use what I need each time).
- 1/2 cup rice milk
- 2 cups rice penne pasta
- 2 slices rice cheese
- 1/2 cup shredded rice cheese
- 1 Tbs. canola spread (or other oil as tolerated)
- salt and pepper if tolerated
Cook pasta as directed on package. While pasta is cooking, heat skillet on medium low heat and add the oil or canola spread. Add the chicken or turkey stock and the milk. Add the slices of cheese and stir gently as they melt (rice cheese does not melt as smoothly as some other cheeses, but once you add the pasta, it turns out fine). Add the can of crab to the liquid mixture and stir gently. When pasta is al-dente, drain the pasta and toss with the white sauce. Season with salt and pepper as tolerated. Transfer the pasta to a casserole dish and top with the shredded rice cheese. Place under a broiler for a minute or less to heat the cheese on top. Serve and enjoy!
