We All Scream for Ice Cream. This weekend we were treated to homemade ice cream made with coconut milk (and without eggs). My son with reflux loved it, and it seemed to love him back. It inspired me to dig out our own ice cream maker and begin experimenting. If you also feel inspired, be sure to share your favorite reflux friendly ice cream recipe with the other readers!
Taste of the Tropics Ice Cream
- 1 (15 oz) can cream of coconut
- 1 (13.5 oz) can coconut milk
- 1/2 cup chunked pineapple
- 1/4 cup fresh sweetened coconut
- 1/4 cup coarsely chopped pecans
In a blender, mix cream of coconut, coconut milk, and chunked pineapple together. Pour the mixture into an ice-cream maker and freeze according to the manufacturer's instructions. Once the mixture has finished churning in the ice cream maker, spoon into serving bowls and top each with a sprinkle of fresh coconut and chopped pecans.
