    Shrimp Salad Sandwiches

    I made these for dinner last night and it felt like we were eating out (but for half the price)! Don’t worry if you live inland, you can just stop by the grocery and pick up a bag of shrimp from the freezer section and then thaw the shrimp in warm water.

    1 pound steamed shrimp (peeled and de-veined)

    3 hard boiled eggs (chopped)

    4 celery stalks (chopped)

    1/2 cup mayonnaise (you can adjust this as needed)

    salt and pepper to taste

    dash of Old Bay seasoning (or parika)

    your favorite lettuce

    4 sandwich rolls



    Spread cooked shrimp onto a cutting board and cut each shrimp into little bites. Add the eggs, celery, and mayonnaise; mix well. Add the seasonings as tolerated. (I put the mixture in the refrigerator for about 30 minutes to help marry the flavors but this is not necessary). Spoon the shrimp salad onto the sandwich rolls and top with lettuce. Cut in half, serve, and enjoy.
