    Blueberry-Apple Crisp

    For many of us, blueberry season is right around the corner. This dessert is gluten, dairy, nut, egg, and soy free. Be sure to leave out the cinnamon if it is a trigger for your reflux (my son with reflux is fine to eat a little bit of cinnamon cooked in a dessert, but of course tolerance to spices varies from person to person).

    Ingredients:

    Fruit Filling:

    2 Granny Smith Apples

    About 4 cups (or 1 bag) blueberries (thawed)

    2 Tbs. cane sugar

    2 Tbs. rice or almond flour

    1/2 tsp. cinnamon

     

    Topping:

    1 cup rolled oats

    1/3 cup rice or almond flour

    3 Tbs. cane sugar

    1/2 tsp. cinnamon

     

     

    Directions:

    Preheat oven to 350 degrees. Combine apples, sugar, flour, and cinnamon in a bowl. Fold in the blueberries. Pour into an 8 x 8-inch baking pan. Combine the oats, flour, oil, sugar, and cinnamon in a bowl. Sprinkle the oat mixture evenly over the fruit. Bake for 35 minutes. Serve warm or let cool.
