    Grilled Chicken with Peach Salsa

    For the past week the peaches in the grocery stores have been really good. Since tomato salsa is out of the question for many with reflux, try topping a grilled chicken breast with peach salsa instead!

    Ingredients for Chicken:

    4 Boneless chicken breasts

    1 Tbs canola or olive oil (or enough to coat the chicken)

    1 clove garlic (if tolerated)

    1/2 tsp salt

    1/4 tsp pepper


    For the Salsa:

    3 ripe peaches, peeled and diced

    1/4 cup onion, diced

    1/2 cup sweet red pepper, diced

    2 cloves garlic, minced

    1 tsp brown sugar

    1 Tbs lime juice

    1/2 tsp salt

    1/4 tsp pepper

    1/4 cup fresh cilantro, chopped



    Toss the chicken breasts in the oil, garlic, salt, and pepper. Heat grill to medium high and cook the chicken until it is cooked throughout.


    In the meantime, combine the ingredients for the peach salsa (this can be made ahead of time and kept in the refrigerator).


    When the chicken is cooked through, top with the peach salsa and serve warm.
