    Pineapple Chicken and Avocado Salad

    Avocados are not only considered one of the healthiest fats but are packed with more potassium than bananas. Avocados are also one of the first foods my son with acid reflux disease could tolerate.

    1 package chicken tenders (breasts would also work)

    1 small can pineapple juice

    1 tsp salt

    1 tsp pepper

    1 bag of salad (your choice)

    2 ripe avocados (peeled and sliced)

    4 ripe nectarines (peeled and sliced)

    Salad dressing of your choice



    Pour the pineapple juice into a mixing bowl. Add the salt and pepper. Marinate the chicken breasts in the pineapple juice for 30 minutes. Remove the chicken from the marinate and grill about 5 minutes on each side until cooked through (the time will depend on the heat of the grill and the size of the chicken pieces). In the meantime, divide the salad onto four plates. Top each with the avocados and nectarines and then the warm chicken from the grill. Drizzle with your favorite dressing.
