    Nectarine Tart

    This is such a great time of year to find nectarines that are just right. This dessert is wheat free, dairy free and gluten free, and my family seems to love whatever I make when I use almond flour.

    2 cups almond flour

    1/2 tsp. salt

    2 ½ Tbs. oil

    1 egg



    1 cup coconut milk

    2 nectarines, peeled and chopped

    3 eggs

    1/4 cup sugar

    1 tsp. vanilla extract



    2 nectarines, sliced

    2 Tbs. blueberries



    Preheat the oven to 350 degrees. Combine the flour and salt. Beat together the oil and egg in another bowl. Stir the wet ingredients into the dry until thoroughly combined. Press the dough into a 9 inch pie pan. Set aside.


    Combine all of the filling ingredients in a blender and mix well. Pour the filling into the crust and bake 35 minutes or until a knife inserted into the center comes out clean. Allow to cool and then refrigerate at least one hour.


    Remove the tart from the refrigerator and cover it with the nectarine slices and top with the blueberries.
