    Coconut Whipped Cream

    A bowl of fresh fruit, topped with whipped cream is one of summer’s best desserts. However, many with sensitive stomachs do not tolerate dairy very well. That is why I was thrilled when I discovered that you can make homemade whipped cream from coconut milk.

    1 15 oz can full fat coconut milk, refrigerated

    1 tsp. vanilla extract

    1 Tbs. agave nectar




    Open the coconut milk and spoon the top layer of thickened cream into a mixing bowl. Whip with an electric mixer until creamy. While beating, move beaters around to infuse air into the cream. Add vanilla and agave nectar and gently stir to combine. Serve immediately or keep refrigerated.
