    Pear Bar Cookies

    Although pears are available at the grocery year-round, they are most delicious in July and August. Celebrate the season with this sweet treat.

    Ingredients for the crust:

    1 1/4 cups flour (almond flour will also work)

    1/2 cup sugar

    1/2 cup cold butter

     

    Ingredients for the filling:

    2 eggs

    1/2 cup brown sugar

    1/2 tsp. vanilla extract

    1/3 cup flour

    1/4 tsp. salt

    1/4 tsp. ground ginger

    2 medium pears, peeled and diced

    1/2 cup flaked coconut

     

    Directions:

    Combine the flour and sugar. Cut in the butter until the mixture makes coarse crumbs. Press into a 9” square baking pan. Bake at 350 degrees for 25 minutes.

     

    In a small bowl, beat the eggs, brown sugar and vanilla. Combine the flour, baking powder, salt and ginger; stir in the egg mixture. Gently stir in the pears and coconut. Spread over the warm crust. Bake 20 – 25 minutes. Cut into bars and enjoy.
