    Chicken with Peach Stuffing

    Chicken is often a staple of a reflux friendly diet, so I am always on the lookout for new ways to prepare it. This dish can be made in advance and warmed before serving which makes it a good option for hectic week nights.

    1 can of sliced peaches (15 oz)

    4 boneless skinless chicken breasts

    2 Tbs. canola oil

    2 Tbs. butter

    1 Tbs. brown sugar

    1 Tbs. cider vinegar

    1 package chicken stuffing mix



    Drain peaches, reserving syrup. Set aside eight peach slices for garnish; dice the remaining peaches. Add enough water to the syrup to make one cup. Set peaches and syrup aside.


    In a large skillet, brown the chicken in the oil. Add the butter, brown sugar, vinegar and reserved syrup. Bring to a boil. Reduce heat and cover and simmer for 10 – 15  minutes depending on the size of the chicken breasts. Add the dry stuffing mix and diced peaches. Remove from the heat; cover and let stand for five minutes. Serve with peach slices.
