Reflux Friendly Cooking
Reflux Friendly Cooking is a weekly feature that will be full of quick and easy food ideas that are acid reflux friendly and can be easily modified to meet the needs of everyone in your family! Each week I’ll provide a simple menu that is designed for easy digestion. I’ll also give you suggestions on how to modify the same recipe for others in your family without acid reflux disease. These wraps can be used as either appetizers or a light lunch. The lettuce allows you to skip the bread and still enjoy a flavorful treat. You can eat these wraps with or without the dressing on top, depending on your level of sensitivity to citrus.
1 Tbs. vinegar
Juice of 1/2 orange
Juice of 1/2 lemon
1 tsp. of chopped ginger root
2 green onions, greens only, chopped
14 oz can of salmon, skin and bones removed
1 cup bean sprouts
1 carrot, grated
1/2 avocado, chopped
4 large romaine leaves
Combine the vinegar, orange juice, lemon juice, ginger and onion in a bowl and whisk together. Set aside.
Put the salmon, sprouts, and carrot in a medium bowl. Combine with a fork. Fold in the avocado and divide the salad among the lettuce leaves. Drizzle with the dressing and serve.
