    Salad Wraps

    These wraps can be used as either appetizers or a light lunch. The lettuce allows you to skip the bread and still enjoy a flavorful treat. You can eat these wraps with or without the dressing on top, depending on your level of sensitivity to citrus.

    Ingredients:

    1 Tbs. vinegar

    Juice of 1/2 orange

    Juice of 1/2 lemon

    1 tsp. of chopped ginger root

    2 green onions, greens only, chopped

    14 oz can of salmon, skin and bones removed

    1 cup bean sprouts

    1 carrot, grated

    1/2 avocado, chopped

    4 large romaine leaves

     

    Directions:

    Combine the vinegar, orange juice, lemon juice, ginger and onion in a bowl and whisk together. Set aside.

     

    Put the salmon, sprouts, and carrot in a medium bowl. Combine with a fork. Fold in the avocado and divide the salad among the lettuce leaves. Drizzle with the dressing and serve.
