    Peanut Butter Rice Bars

    This time of year, I am always looking for reflux friendly ideas for my son’s lunch box. These treats are low-acid, gluten free, and make a great addition to any lunch box.

    3 cups brown rice cereal

    1/2 cup raisins

    1/4 cup chopped nuts (your choice)

    1/3 cup peanut butter

    1/3 cup agave nectar or honey

    1/2 tsp. vanilla extract



    Line an 8x8 inch pan with plastic wrap, overlapping the sides with enough to fold over and cover the top of the pan completely. Spray the wrap with cooking spray. In a mixing bowl, stir together the rice cereal, raisins and chopped nuts. In a small pan, gently heat the peanut butter and nectar (or honey) until the mixture is well blended. Add the vanilla extract. Remove from the heat and pour over the rice cereal; gently stir. Transfer the mixture to the pan. Cover the top with the plastic wrap and press the mixture evenly. Refrigerate at least an hour. Remove from the pan by lifting the wrap and cut into squares.
