    Fiesta Shrimp Bowls

    One of the secrets to cooking for those with sensitive stomachs is to put separate, high quality ingredients together in a way that tastes good even without any heavy sauces. It also helps when a recipe can be subtracted from easily (for those who have a certain trigger food) and also added to easily at serving time (for those who can eat anything). This dish works great on all three levels!

    1 Tbs. canola or olive oil

    2 dozen shrimp, peeled and deveined (I started with a bag of frozen)

    2 bags of instant brown rice

    1 red pepper, chopped

    1/2 onion, chopped

    1 garlic clove, chopped

    salt and pepper to taste



    Cook two bags of brown rice according to directions. In the meantime, heat a large skillet to medium and coat with the oil. Add the vegetables and stir occasionally as you cook through (about 3 minutes should do it). Remove the vegetables and add the shrimp to the same skillet. Cook each side of the shrimp until pink (these too cook quickly). Add the veggies back in with the shrimp and then add the brown rice. Mix gently. Season with salt and pepper to taste. Serve in bowls with salsa on the side for those who can tolerate it.
