    Quick Ham and Egg Bowl.

    One of the smartest guys I know (a biology professor) recently told me that in his opinion, eggs are really one of the “unsung” super foods. He’s right. One egg has lot of vitamins, minerals, high quality protein, and is low in acid and calories. Eggs are also lower in cholesterol than previously reported (USDA, 2010). During this busy season, try starting your day with one of these unsung heroes.

    1 large or two small eggs (beaten)

    1 slice of deli ham

    salt and pepper to taste

    2 Tbs. of cheddar cheese (rice or soy cheese will also work)



    Line a ramekin or small bowl with a thin slice of ham. Pour the egg on top and season with the salt and pepper. Microwave on high for 30 seconds. Remove and stir the egg gently. Return to the microwave for 30 more seconds. Sprinkle with the cheese and enjoy!
