Reflux Friendly Cooking: Cheesy Chicken and Bacon Sandwiches

Cheesy Chicken and Bacon Sandwiches
One of the secrets to cooking for someone with acid reflux disease is to make some “bad sounding” recipes reflux friendly. This approach can really help keep the diet as interesting as possible while helping the individual with acid reflux feel a lot less “left out” of life. I made these this week for both of my sons and they both just raved over how great they tasted.
3 hoagie rolls (rice buns work great)
1 package chicken tenders
3 slices of turkey bacon
3 Tbs. mayonnaise
6 slices of white cheese (rice cheese works great)
salt and pepper to taste
Spray a large skillet with cooking spray and heat to medium. Place the chicken tenders in the skillet and season as tolerated. Cook the chicken on each side about 5 minutes (until all the pink is gone, but it is not dry). While the chicken is cooking, in another skillet, cook the turkey bacon until just crisp. Remove both the chicken and bacon from the heat. Preheat your broiler to high. Begin to build the sandwiches with the chicken and bacon and cheese on top. Place those halves of the sandwiches under the broiler (watching carefully) until the cheese melts. On the other halves of the sandwiches, cover with the mayonnaise and avocado. Put the two halves together and enjoy!
