Reflux Friendly Cooking: French Toast Bake with Apple Sausage

French Toast Bake with Apple Sausage.
This recipe doubles as either breakfast or dinner. It can also be made gluten free and dairy free (pictured). Most regular grocers now carry really high quality sausage, like “chicken and apple all natural smoked sausage.” I made two bread loaf pans for dinner this week and each of my boys ate a whole pan in one sitting. So much for leftovers!
1/2 cup cooked turkey sausage pieces
3 cups bread cubes or small slices (rice bread works great also)
3 eggs slightly beaten
1/2 cup milk
2 Tbs. sugar
pinch of salt
1 tsp. vanilla
1/4 cup maple syrup
Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray. Layer the bread in the bottom of the pan. In a bowl, mix together the eggs, milk, sugar, salt and vanilla. Add the cooked sausage. Pour the entire mixture over the bread. Use a spoon to make sure all the bread is covered. Bake the dish covered with foil for 30 minutes. Then, uncover and bake 5 – 10 minutes more (just to brown the top slightly). Remove from the oven and drizzle with the maple syrup. Serve warm.
