Reflux Friendly Cooking: Quick Shrimp Stir Fry

    Quick Shrimp Stir Fry.

    This recipe is really quick, especially if you can do the chopping ahead of time (or get some family members to help like I did). The dish is packed with nutrients and will make you feel like you are already “lightening up” for the spring season.

    2 Tbs. olive or canola oil

    1 lb. raw shrimp (peeled and deveined)

    1 zucchini (peeled and chopped)

    1 yellow squash (peeled and chopped)

    1/2 onion (chopped)

    1 clove garlic (chopped)

    1 Tbs. ginger (fresh if possible)

    1/2 cup frozen peas

    1/2 lemon (if tolerated)

    salt and pepper to taste



    Pour the oil into a large skillet and heat to medium high. Add the shrimp. Cook quickly on each side until pink (do not overcook). Remove shrimp from the skillet and set aside. Add the zucchini, squash, onion, garlic, and ginger to the skillet. Stir fry until the veggies are soft. Add the shrimp back in. Add the peas. Toss until warmed through. Squeeze the lemon on top and add the salt and pepper to taste. Serve warm.
