Reflux Friendly Cooking: Creamy Chicken Alfredo
Creamy Chicken Alfredo.
You can make this dish when you are having one of those days when you are really needing to be careful to not overdue it (those of you with reflux will know exactly which days I am referring to). This recipe is wheat free and dairy free and you can put it together as plainly and as simply as you need it to be.
Cooking spray or 1 Tbs. of cooking oil
2 carrots, peeled and chopped
1/2 onion, peeled and chopped
1 garlic clove, peeled and chopped (if tolerated)
2 cups cooked chicken, shredded (I used left-over rotisserie)
2 cups cooked rice pasta
1/2 cup mayonnaise
1/8 cup rice milk or chicken stock (either works fine)
salt and pepper to taste
Heat a large skillet or Dutch oven to medium high. Add the cooking spray or oil. Then add the carrots, onion and garlic. Sauté until the vegetables are soft (about 5 minutes). Add the chicken and pasta and toss gently. Remove from heat and add the mayonnaise and rice milk or chicken stock. Toss gently again and serve warm.
