Reflux Friendly Cooking: Asian Noodle Salad

Asian Noodle Salad.
Yesterday, I accidentally came across a package of “fresh rice noodles” in my grocer’s deli section. I bought them not knowing what I would end up making, but knowing that anything with 100 percent rice would be a good starting place for my son with reflux and anything that was already cooked was a good starting place for me!
1 package fresh Asian style noodles (about 2 cups cooked linguini would also work well)
2 chicken breasts (cooked)
1 package coleslaw blend
1/4 cup of creamy peanut butter
1/4 cup soy sauce
2 Tbs. rice vinegar
1 Tbs. minced ginger
1 Tbs. sugar
salt and pepper to taste
Cut the chicken breasts horizontally in half, and then crosswise into thin strips. In a bowl, mix together the peanut butter, soy sauce, vinegar, ginger and sugar until smooth (add a few Tbs. of water if it seems to be too thick). Combine the noodles, chicken and slaw in a large bowl. Pour the peanut sauce on top toss gently to coat. Salt and pepper to taste. Serve cold or at room temperature.
