Reflux Friendly Cooking: Lemon Blueberry Muffins

    Lemon Blueberry Muffins.

    Spring fever has set in at my house. No one is super excited about going to school, which means that I have to make breakfast as appealing as humanly possible to get everyone out of bed. It is time to pull a few tricks out of the hat. This morning I made these light and delicious muffins with fresh blueberries.

    1 1/2 cups flour

    3/4 cup sugar

    2 tsp. baking powder

    1/4 tsp. salt

    1 tbs. lemon extract (if lemon juice is not tolerated)

    1/3 cup vegetable oil

    1/3 cup milk (rice milk or water will work)

    2 eggs

    1 cup blueberries



    Preheat oven to 350 degrees. Line a muffin pan with paper liners. Mix the dry ingredients together in a large bowl. In another bowl, add the blueberries and toss in a Tbs. of the dry ingredients (this will keep the blueberries afloat in the muffins). Mix the lemon extract, oil, milk and egg together. Add the wet ingredients to the dry ingredients and gently mix together. Fold in the blueberries. Fill the muffin tins 3/4 the way full. Bake about 12 minutes (or until a toothpick comes out clean).
