    Picnic-Ready Ham Sandwiches with Peach Jam.

    Father’s Day is a great time to bust out a picnic basket and set the stage for a summer of fun. This sandwich is hearty, but it has a sweet twist that really makes for a nice balance. When my son was young and could hardly tolerate any foods, turkey ham (found at Whole Foods) was one of our “go-to” foods.

    1/2 cup peach jam (or whichever flavor of jam you tolerate)

    4 English muffins

    4 thick slices of ham (turkey ham works great)

    4 slices of your favorite cheese (rice cheese also works well)

    8 leaves of spinach or lettuce



    Toast the English muffins and spread a layer of jam on the top and bottom. Layer a thick slice of ham on each, then a slice of cheese. Top with the lettuce or spinach. Wrap tightly and travel with a cold pack to your favorite outdoor destination.
