    Summertime Munchies.

    Summer is a time when some serious mindless snacking can happen around the pool or out on the deck. And let’s face it, rice crackers and rice cakes are not terribly interesting without a little help. When the summertime munchies hit, reach for choices that you know will keep you feeling good all day long.

    Rice Crackers with Salmon Dip (if you are in the mood for savory)

    12 rice crackers

    1 can or pouch of pink salmon dried and flaked with a fork

    1 cup plain yogurt

    1/2 cup mayonnaise

    1 Tbs. chopped parsley if tolerated

    pinch of salt and pepper

     

    Directions:

    Combine the salmon, yogurt, mayonnaise, parsley, salt and pepper until smooth. Refrigerate for at least an hour. Serve on the rice crackers.

     

    Rice Cakes Topped with Mashed Bananas and Almonds (if you are in the mood for sweet)

    2 rice cakes

    1 ripe banana

    1 Tbs. honey

    1 drop of vanilla

    2 Tbs. sliced almonds

    2 Tbs. shredded coconut
