Reflux Friendly Cooking: Time to Get Crafty for the Fourth!

    Blueberry Pie Cupcakes in a Jar.

    It only takes a little effort to make the July 4th holiday a special occasion for everyone. You can use canning jars (8 oz) to make an all-American reflux friendly treat.

    1 box Glutino Old Fashioned Yellow Cake Mix

    1/2 cup vegetable shortening

    2 large eggs, lightly beaten

    1 tsp gluten-free vanilla

    ½ cup milk or water (rice milk works great)

    cupcake liners

    6 small canning jars

    1 can blueberry pie filling (you can use apple pie filling if blueberry is not tolerated)

    Small container of whipped cream (or coconut yogurt if not tolerated) 



    Preheat the oven to 350 degrees. Make the cupcakes according to the directions on the mix. Place the cupcake liners in a muffin pan and divide the mix among the liners. Bake the cupcakes for 15 – 18 minutes (or until toothpick comes out clean). Let the cupcakes cool completely. When the cupcakes are cool, remove the liners from 9 cupcakes. Halve each cupcake horizontally. In each of the six canning jars, layer 1 cupcake slice, 3 Tbs. of blueberry pie filling, another cupcake slice, 3 Tbs. pie filling and the third cupcake slice. Top each with a dollop of whipped cream. Refrigerate until ready to serve.
