Reflux Friendly Cooking: Bacon Wrapped Shrimp over Rice
Bacon Wrapped Shrimp over Rice. My son recently ordered this appetizer at a restaurant and had it for his main course. It can really be used as an appetizer or a main dish. Using low fat turkey bacon in this recipe is a great reflux-friendly choice and grilling the shrimp keeps them from drying out. With the availability of instant rice, you will have a delectable dish in no time.
1 bag of instant rice (brown or white)
8 large or jumbo shrimp, peeled and deveined
1 Tbs. olive oil
salt and freshly ground pepper to taste
4 slices bacon, cut into 8 pieces
Make the rice according to the package directions. Place the shrimp in a bowl and add the olive oil and salt and pepper. Gently massage. Precook the bacon slightly in a skillet (you want to give it a head start in cooking, but not make it crisp). When the bacon is cooked slightly, wrap each piece of shrimp in the bacon (and use a toothpick to secure if needed). Grill on medium for two minutes on each side (the shrimp will be pink and the bacon will be crispy when done). Serve warm over the rice.
