Reflux Friendly Cooking: Jam-Packed Cake

Jam-Packed Cake. I have made this cake two weekends in a row now. My son with acid reflux disease said it is the best cake he ever had. It is gluten free, dairy free and you can use whichever fruit preserves or jam you tolerate the best.
1 package Glutino Old Fashioned Yellow Cake Mix (any yellow cake mix will work but I use this gluten free mix often in my baking)
1/2 cup canola oil
2 large eggs
1 tsp. vanilla
1 tsp. of lemon oil (or fresh lemon zest)
3 Tbs. of your favorite jam or fruit preserves
Preheat your oven to 350 degrees. In a large bowl, slightly beat the eggs. Add the vanilla and lemon oil. Slowly stir in the cake mix until blended (it will be a very heavy mix, more like cookie dough). Lightly spray or oil a bread-sized cake pan. Press half of the cake mix into the bottom of the pan. Spread the jam on top. Using your fingers, gently add the remaining cake mix on top of the jam. Press the cake mix around to cover the jam (it does not have to be perfect). Bake for 20 – 25 minutes (my son likes it to be a little gooey in the middle so you may need to adjust this time based on your preference).
