Reflux Friendly Cooking: Autumn’s Apple Cake

  • Autumn’s Apple Cake. Most children do not need much of a reason to pick apples fresh from a tree. This cake may be reason enough for the entire family to spend some time visiting the local orchard and enjoying a day together.

     

    Ingredients:

    3 cups flour (gluten free will work fine)

    2 cups sugar

    1 tsp. ground ginger

    1 tsp. baking powder

    1 1/4 cups canola oil

    3 medium apples, peeled, cored and diced

    1 cup chopped pecans

    1 tsp. vanilla

    2 eggs

    1 cup raisins

     

    Directions:

    Preheat the oven to 350 degrees. Mix the dry ingredients. Add the eggs, oil and vanilla and mix together. Fold in the apples, raisins and pecans. Split the mix between two 9 x 4 1/2" greased loaf pans. Bake for one hour and let cool before cutting.
